Following the tour, a tasting of Mumm’s cuvées sheds light on the philosophy of excellence that has guided the House for almost 200 years. When all of these factors are combined to produce an exceptional vintage, the Cellar Master may decide to compose their blend exclusively from wines of the same vintage. The final blends are then placed in the cellar for a minimum of three years to fully express their aromas. These remarkable vintages will leave their mark on the history of the Mumm Champagne House. Stretching over 30,000 hectares, the Champagne region benefits from a unique microclimate, marked by severe frosts during winter and plenty of sunshine in summer. These specific characteristics help preserve the finesse of the grapes and are propitious to optimal ripening. They also determine the personality of Mumm wines and define their aromatic complexity. The nature of this terroir, the richness of its subsoils and its specific microclimate, coupled with the House’s expertise, help produce unique wines, year after year. It was founded by three brothers: Jacobus, Gottlieb and Phillip Mumm, German winemakers from the Rhine valley, along with G. Heuser and Friedrich Giesler on March 1, 1827, as P. A. Mumm Giesler et Co. P.A. were the initials of the Mumms' father, Peter Arnold Mumm, a successful wine merchant from Solingen. Mumm's label is famous for its red ribbon ( Cordon Rouge), patterned after and resembling the red sash of the Grand Cross ( Grand-croix)—formerly called Grand Ribbon ( Grand cordon)—the highest level of the French Legion of Honour. Mumm’s 100% Grand Cru champagnes, RSRV Blanc de Blancs and RSRV Blanc de Noirs, express the best of the House’s vineyard and the nobility of these grape varieties. Praised for its elegance and freshness, the RSRV Blanc de Blancs reflects the very essence of Chardonnay from Cramant. The rare cuvée RSRV Blanc de Noirs is produced from Pinot Noir grown in Verzenay, the historic Mumm terroir. It reveals a champagne with incredible aromatic richness and beautiful complexity. Mumm Cordon Rouge is beautifully presented in an iconic bottle adorned with a red ribbon thathas paid homage to the Legion of Honour since 1876.

Full of character and emotion, the Mumm vintage champagnes merit gastronomic food pairings that match their flavour profiles. The Millésime 2008 goes marvellously with sweet and sour dishes, such as pan-fried foie gras and apricot jelly or game, accompanied by caramelised quince, while the Millésime 2012 unveils all its qualities when paired with fish, shellfish, or tangy, fruity desserts, which enhance its freshness and minerality. In 1964, René Lalou, the head of the Mumm Champagne House, and Léonard Foujita (1886–1968), a Japanese painter belonging to the École de Paris school of art, decided to build a chapel in the gardens belonging to the Champagne house. Begun in 1965, the Foujita chapel was entirely designed by Foujita in the romanesque style, who drew the plans and designed the ironwork, stained glass and sculptures. He supervised the building and interior decoration. Mumm Cordon Rouge, the House’s signature cuvée, and Mumm Grand Cordon, presented in an innovative bottle, epitomise Mumm’s philosophy, based on authenticity, tradition, and an avant-garde approach. In November 2016, G.H. Mumm announced the appointment of eight-time Olympic gold medallist sprinter Usain Bolt as its "CEO" (Chief Entertainment Officer) to feature in a multi-media promotional campaign. [ citation needed] The House’s legendary cuvées stand as a testimony to their era while reflecting their terroir. Thanks to its lively, intense flavours and capricious weather conditions, Mumm Millésimé 2012 was marked by severe springtime frost and heavy rainfall, followed by cool, wet weather in June during flowering and a particularly hot end to summer. All of these conditions resulted in yields that were low but of exceptional quality. The resulting wines are intense and superbly well-balanced, with the Pinot Noir contributing aromas of white fruit and citrus, combined with the roundness and voluptuousness of Chardonnay from the Côte des Blancs.

The House demonstrated its capacity for innovation as well as its strong commitment to terroir – one that has never wavered through the centuries – by setting up its wine presses directly in the vineyards, an innovation symbolising its commitment to quality that continues to this day. Thus in 1840, when the company acquired its first parcels situated in Verzenay, a wine press was built and installed at the same time, which is still in use today. In 1957, René Lalou, President of Maison Mumm, was looking for a symbol to reinforce the image of its champagne rosé. An avid art collector, he asked Foujita to work on an idea, which the artist presented in the form of a watercolour. “Léonard Foujita’s Rose” had just been born. Nearly two centuries after it was established, Georges Hermann Mumm’s vision continues to steer the House’s philosophy and the production of outstanding champagnes. This is reflected in Mumm’s strong attachment to the vineyards, respect for traditional expertise, and an innovative spirit, which guarantees the excellence of its wines. This vision defines the unique style of Mumm champagnes. Among the crus to stand out in recent decades, the 1995, 2006 and 2009 vintage champagnes are timeless cuvées, which are highly sought-after by connoisseurs.
