About this deal

As incredible as Tunnock’s teacakes are, I couldn’t help but think how much nicer they would be with a little bit of jam. Hello, I’m not sure where you are residing now but you mentioned missing Lurpak butter which you purchased in the UK. Our family has had many many packets of these now and never never ever have had an actual spot of jam in any.

Mallow (38%) (Sugar, Glucose syrup, Egg white), Dark chocolate (34%) (Sugar, Cocoa mass, Cocoa butter, Skimmed milk powder, Palm oil, Shea butter, Emulsifier [ soya lecithin], Flavouring), Biscuit (28%) (Fortified wheat flour [ wheat flour, calcium carbonate, iron, niacin, thiamin], Vegetable oil [palm, rapeseed], Sugar, Raising agents [sodium bicarbonate, disodium diphosphate]). You’ll need to add all the ingredients to a heatproof bowl and place over a pan with simmering water and whisk.I think my boyfriend got very fed up of all these teacakes I was making but hey, it was worth it because I think my recipe is pretty good! Her blog, Stetted, focuses on her family’s journey from junk food addiction to a diet of local, organic, and whole foods, while exploring the many options farmers provide. I remember it vividly from my childhood as it was one of the rare home-baked goods I would ever get (my family is not keen on baking). In looking through, I passed a recipe for jam-filled muffins and I decided to make my Poor Man’s Teacakes a little richer by sticking mixed berry jam in the middle. Butter an 8 inch square baking tin and line with some baking parchment leaving an overhang on two sides.

Fast forward another few weekends spent in the kitchen trying to come up with a better biscuit recipe and voilà, I finally got there! Don’t use a chocolate with a high percentage of cocoa – it will be hard to remove the teacakes from the mould and they make break when doing so. I do suggest baking it in lower temperatures for a longer time, otherwise the cake will come out dry. With the temperatures warming and spring produce starting to emerge, my thoughts turn to the impending canning season.
