Prepare your palate for the delectable flavors of milk chocolate and fudge, laced with caramel undertones and a warming finish of bourbon and apple brandy. This stout was first aged 12 months in 11-year-old Elijah Craig barrels from our friends at Heaven Hill distilleries.

Production is extremely limited, as the amount of care and labor which go into each batch is substantial. We sent it to friends who have just become grandparents for the first time and they were absolutely delighted. Brewed with Monson’s own Maxwell Road Maple Grade A Dark Amber Maple syrup, Good Morning pours pitch black in the glass with a creamy mousse-like head. When we first released Kentucky Brunch Brand Stout back in early 2012, we knew we believed in the experience it had to offer, but with only 6 people showing up for the original release, we had no idea how well it would be received over the long term. Back in 1979 the folks at Heaven Hill Distilleries filled a handful of new freshly charred American white oak barrels with some of their finest whiskey.The Willett barrels, a continual favorite of mine, bring our "house" Side Project character to these recipes.

The result is exactly what we had set out to produce and we are honored it is worthy of the Beer : Barrel : Time name. DM falls somewhere between Derivation and Medianoche - an Imperial Stout that we had the pleasure of brewing with our friends at Weldwerks more than 2 years ago. Similar to the experimental and boundary-pushing nature of the aircraft, SR-71 is an experimental outlet to test processes and recipe design.In her song "Muñecas", Argentinian singer Tini Stoessel sings "bottles are uncorked, tonight there will be rain of Moët". We brewed this Rye Imperial Stout with a higher hopping rate for the rye and hops to play together, to offer a snappy backbone to the aging and decadent adjuncts we had planned on infusing this massive stout with. Caramel and toffee flavors blend together with bold notes of bourbon delivered in a smooth body followed by a malty finish.

It is perfect with sushi and dumplings, shellfish and fish in light sauces, poached, roasted, or lightly sauced white meats, and fresh fruit salads that are not too sweet. Intense aromatics of espresso and maple syrup lead into bourbon drenched maple candy and chocolate brownies on the palate. This year's version features a little twist of aging the stout in Rye Whiskey Barrels with a mix of Mexican and Madagascar vanilla beans!It pours a deep purple in color, has a dense fruitiness and a mid-palate with considerable tartness and a lingering, balanced finish. After about 14 months in those casks, we selected and blended the best of what our barrels had to offer, then introduced this blend to a handful of 21 year Elijah Craig barrels for 14 more months. It then turns very elegant with flavours of citrus fruits such as gooseberry finish of the fireworks in your mouth. We believe BBT 2021 showcases the rich chocolate and sweet coconut notes of this massive style while also providing the needed roundness and integration of the bourbon and oak characteristics to produce a harmonious experience.
