About this deal
I can’t stand the flavor of it, and don’t like any dressings or other foods that have been “tainted” with the taste! Ghee’s smoke point (where its molecules begin to break down) is 250 °C (482 °F), Higher than most other oils.
Still, Persian rice, or polo, can’t be replicated in the microwave (if someone has managed to passably do so, please let me know). Despite my unlimited free time to test and perfect polo to my madar-joon’s standards, I realized I needed a shortcut.Optional You can also use a thinly sliced potato or flat bread such as lavash or Lebanese bread for the Tahdig. Come to discuss Iranian Politics, Persian and Iranian History, Persian Art, Persian Cuisine, Iranian Music and much more. I've also posted in r/RiceCookerRecipes, but since I'm here, I also take the opportunity to ask if there's a reliable source in english for persian/iranian food and recipes I can look at, to make proper tahdig in the future and explore lesser known dishes.
Detach the tadig at the bottom of the pot and arrange pieces around the rice or on a separate small plate (see picture below).Fortunately, for all of us my regular reader Aaron saved the day by letting us know about the technological explanation. Wrap the lid of the rice pot with a clean kitchen towel or a couple of layers of paper towels to catch the condensation. Once all the water has been absorbed (it’s OK to lift the lid to check), around the 30-minute mark, unplug the rice cooker to pause the cooking. To make rice with the yummy bottom crispy rice crust, drain and rinse the rice after steaming, add extra cooking oil to the bottom of the rice cooker pot, transfer the rice back in, and cook, pressing high on the rice cooker a couple of extra times.
