About this deal

Tubetti pasta, despite being one of the more obscure pasta shapes, is an extremely versatile ingredient that can be a perfect addition to most dishes. Whether it’s served alongside a simple homemade marinara or swimming in some flavorful vegetable broth, tubetti pasta is a wonderful inclusion to any meal. Then, the mushrooms go in with a little soy sauce and are sauteed for 2 minutes before adding in the snow peas and cooked for another 2 – 3 minutes or until mushrooms have reduced to about half their size. All the veggies are removed and set aside.

Put the saucepan on the heat until it is hot and add the octopus. Mix until it sweats out a pinkish liquid. Keep an eye on it mixing every now and then and cook it in its juices until that liquid has evaporated. Then allow the vegetables to cook over a medium heat for about 10 minutes, until they’ve softened. Make sure you stir this quite frequently to stop anything from catching and burning on the bottom. Pasta e fagioli is a dish for all seasons. In winter, it is made with dried or tinned beans, a serious soffritto of onion, carrot and celery, tinned plum tomatoes, served steaming hot. From late spring, when fresh borlotti are showing off their raspberry ripple stripes at the market, the same dish wears summer clothes, freshly shelled beans, an olive oil and garlic sofritto, ripe tomatoes, fresh egg pasta and served at much the same temperature as a summer night. Rice is a versatile option that you can consider. Arborio rice, similar to ditalini, has a small and starchy grain, making it a great substitute when you’re looking for a similar texture. It absorbs flavors well and can be used in soups or stews. Are you making pasta e fagioli, the classic pasta and bean soup? Try tubettini, a pasta that is very similar in shape, only a little longer. The world of Italian pasta can be very confusing, not only because there are so many pasta shapes but also because for most pasta shapes there isn’t really an official standard for pasta makers to follow. What there is are commonly accepted measurements and shapes for particular pastas with a bit of overlapping, name borrowing and a ‘va bene cosi’ (it’s okay like that!) attitude when it comes to homemade pasta! To replace ditalini in your next recipe, your best options are to use ditaloni or tubettini. Although you'll find them both a little larger, they’re a similar shape and have the same uses in cooking. While risoni is a different shape, it’s an easy-to-find pasta that’ll work fine in soups and stews. 1. Ditaloni Add another couple of ladlefuls of bean cooking water and then the pasta. Continue cooking, stirring attentively until the pasta is tender. You may need to add a little more bean cooking water. Serve immediately. In a large skillet on medium-high heat, add a little oil and saute the vegetables, each one separately. Start with the courgette/zucchini. Saute until lightly charred on both sides. Take care not to let the courgette turn soggy. Remove the courgette from the pan and toss in the mushrooms. You don’t need to add any more oil, unless you want to. Season the mushrooms with the soy sauce and cook for about 2 minutes. Add in the snow peas and cook for another 2 - 3 minutes or until mushrooms have reduced to about half their size. Remove and set aside.

This was marvelous. I was able to find some Fontina cheese in our local market and made sure I kept it for this recipe. Made it tonight– our first really cool evening here in central California–so good! Allen Tagliolini pasta arancini. It is not the same. The shape of Italian macaroni is a smooth, straight enlogated tube. Not only is it longer, it also tends to be bigger in diameter than ditalini. If you’ve ever eaten SpaghettiOs, made by Franco-American, then you’ll have tried anelli pasta. They are small, thin rings of pasta, delicious in tomato sauce. Anellini are a smaller version of these spaghetti hoops and they make a great ditalini replacement. The octopus must be very carefully washed and dried, and the beak removed. Orzo: Orzo is a rice-shaped pasta that adds texture and bite to soups, salads, and other dishes. Similar in size to ditalini, orzo can be used as a direct substitute for ditalini without altering the recipe. Reserve pasta water: Before draining the cooked pasta, save a cup of the pasta water. This starchy water can be used to adjust the consistency of your sauce, help it cling to the pasta, or add moisture to the dish. The Neapolitan version, neither a soup nor a simple plate of pasta, is usually described as azzeccata, dense, creamy and well mixed, thanks to the stringy melted provolone cheese that binds it all together," explained Scarpaleggia. "A key ingredient is a Parmigiano Reggiano rind that cooks with the pasta and potatoes, adding depth of flavour to the dish".
