Rausu konbu is harvested along the coast adjacent to the town of Rausu at the northern tip of Hokkaido’s Shiretoko Peninsula. The strands are a soft brown, with a lovely fragrance, producing a yellow- tinged, yet aromatic, rich dashi.

If you are using a container with a smaller/larger surface area, you will have more/less (respectively) layers of turnip slices. In this case, the konbu, chilli and marinade need to be divided into more/less accordingly. But if we change the way we eat to reflect more of the healthier countries out there, perhaps we can begin to reverse this trend. Kombu, a Japanese staple, is a good place to start. Since the width of long kanpyō strips is not consistent, you will find that some are wider than others. If the string is too wide, Kobumaki does not look good. Wide string is also harder to make a knot with. Those most at risk are women who menstruate, are pregnant or breast-feeding, anyone who has had major surgery, vegans and vegetarians, or someone who has ulcerative colitis to, name a few.
