Kriek beer follows the same initial process of brewing Lambics. The processes branch off once you select the age of your base Lambic. Below is the outline: Like all Lambics, Krieks age well. Unfortunately, there are trade-offs. Aging for longer allows the yeasts to develop their associated flavors in the beer. If these flavors are not what you want to emphasize in your Kriek, brewers recommend one to two years of aging. Kriek lambic is a style of Belgian beer, made by fermenting lambic with sour Morello cherries. [1] [2] Traditionally " Schaarbeekse krieken" (a rare Belgian Morello variety) from the area around Brussels are used. As the Schaarbeek type cherries have become more difficult to find, some brewers have replaced these (partly or completely) with other varieties of sour cherries, sometimes imported.A traditional kriek made from a lambic base beer is sour and dry as well. The cherries are left in for a period of several months, causing a refermentation of the additional sugar. Typically no sugar will be left so there will be a fruit flavour without sweetness. There will be a further maturation process after the cherries are removed. Framboise is a related, less traditional Belgian beer, fermented with raspberries instead of sour cherries. Kriek is also related to gueuze, which is not a fruit beer but is also based on refermented lambic beer. Some breweries, like Liefmans, make "kriek" beers based on oud bruin beer instead of lambic. Of all fruity beers, Belgian kriek beers are the most renowned. Its unique and sweet taste is loved by many. Belgian kriek beer (also known as Creek or cherry beer) is a perfect beer to drink on a warm, sunny day. It’s sweet but refreshing and has an average alcohol by volume of about 5%. When it comes to blending, Gueuze traditionally requires a three-year blend. Conversely, Kriek does not need to go beyond blending with a one-year-old Lambic.
