Zacapa was created in 1976 to celebrate the centenary of the foundation of Zacapa, a town in eastern Guatemala. In addition to the 23, Ron Zacapa also offers the XO, a more mature and sophisticated rum. Aged in French oak barrels that previously held cognac, the XO is a blend of rums between 6 and 25 years old. It features a more robust profile with hints of chocolate, toasted nuts, and dark fruit. Our plantation is located on the volcanic plains of Retalhuleu, 350m above sea level in south-western Guatemala. Due to the fertile, acidic soil and year-round sunshine, no other place in the world is better suited to the cultivation of sugar cane. Most rums use molasses, a by-product of the sugar making process, as their base; Zacapa, however, is different. To impart a sweeter, smoother flavour, Zacapa uses only the concentrated first press of sugar cane, known as virgin sugar cane honey. This is the very point at which our rum's remarkable taste and profile begin to develop.

Vôňa rumu je príjemne sladká a mierne alkoholová. Základ je karamel a drevo, pod tým je možné zacítiť aj tóny vanilky a čokolády s višňami. Veľmi výrazná je dymová aróma po vypálených sudoch. Chuť je ťažšia, no rum nepôsobí presladene, i keď pre priaznivcov suchších rumov bude stále príliš sladký. Poteší dymový akcent s korením. Základ je samozrejme karamel a vanilka. In short, I used a Vinturi Spirit Aerator, and used that to pour the rum into one of the Neat Whiskey Glasses (I don't have a specific rum glass... wouldn't mind some recommendations). Ďalší v rade je potom rum Zacapa El Alma, ktorý je zase venovaný druhému súdku v poradí systému solera (špeciálne vypálený dubový sud po bourbone). Len pre poriadok – tretí bude dedikovaný súdku po sherry Oloroso ( La Armonía) a štvrtý po Pedro Ximenez.
