Cream the butter and sugar together until well combined. This will only take a couple of mins if the butter is soft enough. Jammy Dodger Tips

As it is nearly Valentine’s day I decided to post these as heart & circle jammie dodgers, like the classic ones, but as you can see.. my cutters are a little bent. I have used the same cutters than were handed down to me from my Gran (seriously, it feels like there are hundreds) and I will still always use them now.

Bake in the centre of the oven for 10 – 12 mins. Or until baked. They won't have a deep golden baked colour, but they will be slightly firm to the touch. Jammie Dodgers are two shortbread biscuits sandwiched together usually with raspberry or strawberry jam, or your favourite fruit preserve or curd. Winners may be requested to take part in reasonable publicity relating to this Promotion. The Promoter may request to use the winner’s name and image in connection with such publicity. I used to be addicted to the shop-bought ones all the time – and they featured on my Jammie Dodger Cupcakesfor ease (as they were requested to be that way) but I usually bake my own – it is a bit of effort I will admit, but I think they are so much better homemade! Preheat the oven to 160deg fan assisted. Have ready a baking tray lined with a silicone baking sheet or baking parchment.

TIPS AND FAQ’S

Any question concerning the legal interpretation of the rules will be based on English law and the Courts of England and Wales will have exclusive jurisdiction, unless you live in another part of the UK or the Channel Islands, in which case your local courts will have jurisdiction. Place them onto the prepared baking sheet with enough space to allow for a little spreading. You will either need to bake in batches or use more than one baking tray. You can keep bringing the dough together and re-rolling and cutting out until all of the dough is used up! Make sure to chill the biscuits again if you are not baking straight away – and for example if only a few trays fit in your oven at a time. Biscuits need a bit of sweetness and these home made Jammie Dodgers are no exception. Caster sugar is usually what you’d use in most baking, however we are using Icing Sugar here. Why? Because it’s much finer and adds to the melt-in-the-mouth texture of these biscuits. What’s particularly great about this Jammy Dodger recipe (or “Granny Dodgers”, as they’ve lovingly been dubbed in our house) is just how simple they are to whip together. The dough takes all of 10 minutes to mix up and aside from a little wait time to let it firm up in the fridge, you’ll have a batch of deliciously fresh Jammie Dodgers for any occasion in no time at all.

Using butter in this recipe does give a nice flavour but if you need to omit the dairy, margarine is an excellent alternative.

Turn over the whole heart shapes so that the smooth part is on the outside. Add ½ teaspoon of apricot jam in the centre and carefully spread towards the outside edge of the biscuit.
