The Microplane Gourmet Series retains the clog-resistant stainless steel blade of all Microplane graters, but with the addition of an angled, non-slip bar at the table end, improving leverage when grating. This thing is razor SHARP, so it makes grating much easier than an old fashioned type grater because you don’t have to use as much force. I don’t have the strength I used to have, so I’m thankful for this. You might want to use a cut proof glove for grating, or at least pay very close attention, especially if you’re accustomed using an older style grater. I’ve shredded sharp cheddar cheeses, softer Muenster and Colby cheeses, and it does an excellent job at creating long shreds. Softer cheeses can benefit from a few minutes in the freezer before shredding, but I’ve never had any issues. Chop the carrot in half. A whole carrot is usually too cumbersome to julienne, so it helps to cut your carrots into smaller pieces. Use a sharp chef’s knife to slice the carrot in half horizontally. Set the mandoline on a flat surface. While a mandoline is often safer to use than a knife, it is still extremely sharp and can be dangerous if you don’t use it properly. If your carrot keeps moving as you're trying to cut, you may want to slice a small piece off on one side to create a flat surface to steady it. Cut each carrot piece into four.
