Only the finest, hand-selected oak casks are used for maceration to ensure that the whisky is as consistent as possible. Edradour was acquired in 1982 by drinks giant Pernod Ricard. Following the acquisition, three quarters of the distillery's yield was initially used in the production of blended whiskies, notably including ‘House of Lords’ and the auspiciously named ‘King’s Ransom’. It was not until Signatory acquired the distillery in 2002, that Edradour concentrated its efforts, almost solely, on producing single malts. Renowned for experimenting with various outlandish wood finishes, Edradour has released various malts matured in some rather interesting casks, a ‘Chardonnay Finish’, a ‘Côte de Provence’ and a curious ‘Tokaji Wood Finish’ being among the number. The distillery lies directly at the small Edradour burn. Some of the distillery buildings are located on the other side of the water and can only be reached via a bridge. Edradour whiskies vary in style, but usually have sherry finishes and a robust profile. Their flagship 10 year old expression, from their core range, is matured in ex-Oloroso and ex-bourbon casks, resulting in notes of fruit, spice and nuts. Conversely, the Edradour Ballechin 10 Year Old is a heavily peated bottling from their Discovery Range; a range that experiments with different casks, including wine.Edradour 10 Years is the flagship malt for the Edradour distillery owned by Andrew Symington who also owns the Signatory Vintage bottling company as well. In addition to their standard Edradour releases they also put out a peated whisky under the Ballechin line which isn’t a totally uncommon practice. Tobermory does the same thing and releases their peated whisky as Ledaig. Cask Strength 21 Year Old Oloroso (Sherry matured for 21 years solely in a first fill Oloroso Sherry Butt) (58%ABV) Established in 1825, the distillery was traditionally run by three men; now there are two. Also produced for two days a week is a heavily peated version of the Edradour called Ballechin. It continued to play a low-key role in blends until 1986, when it first appeared as a single malt. A clean finish generally, fruity with a touch of vanilla, like a good fruitcake with unctuous custard.
