Fresh ginger root is another wonderful spice that there will be arguments about including here. But anyway, this rhizome has a definitive heat to it quite different to chili heat and with a zing that is not there with its milder cousin galangal. Just as some Thai cooks like to use the strained version of chili oil, from our experience most will use chili paste which is called nam prik pao. Be aware though that most seasonings contain quite high levels of salt which is thought to cause high blood pressure. If you can find low sodium versions they’ll help but otherwise just be aware of the salt in the seasoning you are adding. It is a salty brown seasoning sauce similar to soy sauce, but more intense and saltier in taste. This type of sauce is perfectly balanced with many Thai food recipes. You can just add a few dashes to your food. It brings out the flavor of soups, sauces, salads and vegetable dishes. Usually, on the breakfast table you will see a bottle of this seasoning sitting next to the salt. The well-known brands in Thai market are Golden Mountain and Maggi. A wonderful ingredient with amazing reported heath qualities and a great yellow color which is used very often.

Yellow Cap Seasoning Sauce: ซอสปรุงรสฝาเหลือง

It is used in very many Thai dishes adding a light umami flavor and moderate saltiness through its unique flavor profile. It is also used quite a lot in dipping sauces but beware as there are several qualities with differing flavor intensities. Seasoning – I also recommend adding extra seasoning to your breadcrumbs bowl and your flour bowl. This adds extra flavour and otherwise this recipe for air fryer fish patties can be rather bland. I recommend parsley for your flour and then dill, parsley, and basil for your breadcrumbs. Then extra seasoning for your patties before breading of salt, pepper, coriander, parsley, and thyme. Maggi seasoning is very similar to the golden mountain yellow cap seasoning but also used quite frequently as an ingredient in cooked dishes.

Black Sweet Soy Sauce (Si-Ew Whan) : ซีอิ๋วหวาน

Short answer: Sort of. You could replace fenugreek with some garam masala (a blend commonly used in Indian dishes), yellow mustard seeds and brown sugar or just leave it out. Don’t tell my kids, but this homemade Thai seasoning might become my new go-to blend. If you’ve had other Asian seasonings, it’s sort of like curry powder.

This is a great spice that is much underused in traditional widespread Thai dishes. Chili Oil A recent addition to Thai cuisine (a mere hundred years old), Green Curry Paste uses green chilies, shrimp paste, garlic, shallots, lemongrass, peppercorns, makrut limes, cumin seeds, lemon and sea salt to taste. Chili Sauce (Sauce Prik): ซอสพริก

You can think of fish sauce or ‘Nam Pla’ in Thai, as the soy sauce of Thai cuisine. Similar to Chinese soy sauce, Thai fish sauce is used in cuisine as both a condiment or ingredient in recipes and you can almost always expect to use it when preparing a wide range of Thai dishes from Thai green curry, Tom Kha soup, Thai salads and fried rice recipes. Fish sauce is used almost as a substitute for salt, adding a rich savoury and umami flavour when preparing curries, soup, stews, in marinades and even dips such as classic Phrik Nam Pla. This is the closest facsimile to Indian curry paste in Thai cooking. It’s made with turmeric, yellow chilies, lemongrass, galangal, fish sauce, lemongrass, shallots, garlic, coriander, cumin (ground and seeds), cinnamon, shrimp paste, white pepper, brown sugar, tomato puree, lime juice and coconut milk. 4. Massaman Curry Paste Massaman Curry Paste contains garlic, soybean oil, dried red chilies, shallot, salt, lemongrass, coriander seeds, cumin, cardamom, cinnamon, bay leaves, galangal, cloves, kaffir lime, citric acid, tamarind juice, salt and sugar. The principal ingredient of Massaman Curry, it goes well with dishes that contrast the spice with sweetness – the use of peanuts is often encouraged. Originally from Malaysia, this curry paste is similar to red curry but with milder flavors. 5. Penang Curry Paste The green label seasoning is a concoction somewhat similar to soy sauce to add a different flavor profile to a dish and is sold in bottles with green lids.
